Smoked lamb tartar, traditional fried bread, cream of horseradish and sorrel

Starters:

Duck salad with spinach, pomegranate, clementine, slow cooked duck thighs, and mint and coriander dressing

Grilled mink whale with crunchy oyster mushrooms and chili threads

Beetroot-cured trout, mustard dressing, trout roe and spiced bread

Main Courses:

Lightly salted cod with grilled apple purée, lobster salad and shellfish sauce

Breast of goose and lightly smoked pork belly served with creamed mushrooms, red cabbage, chocolate and cowberry

Desert:

Ris a la mande with caramel, roasted almonds and berry compote
